Punjabi Alo Gobhi Di Saukhi Sabji: Your Weeknight Punjabi Comfort Food 🌸 Recipe

Ingredients 🥄

One medium cauliflower, cut into florets
Two medium potatoes, peeled and cubed
One medium onion, finely chopped
Two medium tomatoes, pureed
One inch ginger, grated
Two cloves garlic, minced
One green chili, finely chopped (adjust to your spice preference!)
One teaspoon turmeric powder
One teaspoon red chili powder (or Kashmiri chili powder for colour)
One teaspoon coriander powder
Half teaspoon cumin powder
Half teaspoon garam masala
Two tablespoons cooking oil (vegetable or canola)
Fresh coriander leaves, chopped, for garnish
Salt to taste

Instructions 📋

First, let's get those veggies prepped! Wash and chop the cauliflower and potatoes as directed.
Now, heat the oil in a pan or wok over medium heat. Add the chopped onion and sauté until golden brown.
Next, add the grated ginger and minced garlic. Sauté for another minute until fragrant. Mmm, that aroma!
Pour in the tomato puree and cook for a few minutes until the raw smell disappears.
Time to add the spices! Add turmeric powder, red chili powder, coriander powder, and cumin powder. Mix well and sauté for a minute or two.
Add the cauliflower and potatoes to the pan. Mix well to coat the vegetables with the spice mixture.
Season with salt to taste.
Add about half a cup of water. Cover the pan and let it simmer on low heat for about 15-20 minutes, or until the vegetables are tender. Stir occasionally to prevent sticking.
Once the vegetables are cooked through, sprinkle with garam masala and chopped green chili. Mix gently.
Garnish with fresh coriander leaves.
Serve hot with roti, paratha, or even rice. Enjoy!
