Punjabi Sweet Saffron Dreams: Kesar Phirni for the Modern Soul 🌸 Recipe

Ingredients 🥄

1/2 cup Basmati rice (long grain)
4 cups whole milk
1/2 cup granulated sugar (adjust to your sweetness preference)
A generous pinch of saffron strands
1/4 teaspoon cardamom powder
1 tablespoon chopped almonds and pistachios for garnish (optional)
Rose petals for garnish (optional)

Instructions 📋

First, rinse the Basmati rice thoroughly under cold water until the water runs clear. This helps remove excess starch and prevents the phirni from becoming too sticky.
Next, soak the rice in enough water to cover it completely for at least 30 minutes. This step ensures a smoother texture.
While the rice is soaking, gently warm the milk in a heavy-bottomed saucepan over medium heat. Be careful not to scorch it!
In a small bowl, steep the saffron strands in 2 tablespoons of warm milk. This will extract the beautiful color and flavor. Set aside.
Drain the soaked rice and grind it into a coarse paste. You can use a blender or food processor, adding a little water if needed to get it going. It shouldn't be completely smooth; a slightly grainy texture is desirable.
Add the rice paste to the simmering milk and stir continuously to prevent lumps from forming. Reduce the heat to low and continue stirring for about 20-25 minutes, or until the phirni thickens to a creamy consistency. Remember to scrape the bottom of the pan to prevent sticking!
Stir in the sugar, saffron milk, and cardamom powder. Mix well until the sugar is completely dissolved. Taste and adjust the sweetness if needed. For an extra touch of warmth, consider adding a pinch of cinnamon or nutmeg.
Remove the phirni from the heat and let it cool slightly. Pour it into individual serving bowls or a large serving dish.
Garnish with chopped almonds, pistachios, and rose petals (if using).
Refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld and the phirni to set completely. This is best served chilled.
Enjoy your Sweet Saffron Dreams! It's the perfect ending to any meal or a lovely treat for yourself.
