4 large potatoes, boiled, peeled, and mashed (about 2 cups)
1/2 cup peas, boiled and lightly mashed
1/4 cup chopped onions

1/2 teaspoon red chili powder
1/2 teaspoon turmeric powder
1/2 teaspoon coriander powder
1/2 teaspoon garam masala
1/4 cup chopped coriander leaves
2 tablespoons cornflour or rice flour
Salt to taste
Oil, for shallow frying
For Serving:
Mint-coriander chutney
Tamarind chutney
Sweet yogurt (optional)
Chopped onions
Sev (thin crispy noodles)
Coriander leaves, for garnish

Get Your Potatoes Ready: Make sure your potatoes are nicely mashed, but don't overdo it. We want a little texture! Mix in the mashed peas, onions, green chilies, ginger-garlic paste, and all the lovely spice powders: red chili, turmeric, coriander, and garam masala.
Binding it Together: Add the fresh coriander leaves and cornflour or rice flour to the potato mixture. This will help bind everything together and give your tikkis that perfect crispy exterior. Season with salt to taste.
Shape and Chill: Now, take a portion of the potato mixture and shape it into small, round patties, about 2-3 inches in diameter. Place the tikkis on a plate and chill them in the fridge for at least 30 minutes. This helps them firm up and prevents them from breaking while frying.
