Punjabi **Sunshine Dal: Your New Favorite Comfort Food ☀️** Recipe

Ingredients 🥄

1 cup Moong Dal Dhoti (Split Yellow Moong Dal)
4 cups Water
1 tbsp Ghee (Clarified Butter)
1 tsp Cumin Seeds (Jeera)
1/2 tsp Asafoetida (Hing)
1 inch Ginger, grated
1-2 Green Chilies, finely chopped (adjust to taste)
1/2 tsp Turmeric Powder (Haldi)
1/4 tsp Red Chili Powder (optional)
1/2 tsp Garam Masala
Salt to taste
Fresh Cilantro, chopped, for garnish
1 tbsp Lemon Juice (optional)

Instructions 📋

First, rinse the moong dal dhoti thoroughly under cold water until the water runs clear. This helps remove excess starch.
Next, in a pot or pressure cooker, combine the rinsed dal with 4 cups of water. Add turmeric powder and salt.
If using a pressure cooker, cook for 2-3 whistles on medium heat. If using a pot, bring the mixture to a boil, then reduce the heat and simmer for 20-25 minutes, or until the dal is soft and mushy. Stir occasionally to prevent sticking.
While the dal is cooking, prepare the tadka (tempering). In a small pan, heat ghee over medium heat.
Add cumin seeds and asafoetida. Let them sizzle for a few seconds until fragrant. Be careful not to burn them!
Add the grated ginger and green chilies. Sauté for about a minute until the ginger turns light golden brown.
Pour the tadka over the cooked dal. Mix well.
Stir in red chili powder (if using) and garam masala. Simmer for another 5 minutes to allow the flavors to meld together beautifully.
Finally, garnish with fresh cilantro and a squeeze of lemon juice (optional). Serve hot with rice, roti, or naan. Enjoy this flavorful and wholesome dish! 😊
